During my recent visit, I embarked on a culinary adventure at POSI+IVO, where Chef de Cuisine Daniel Franco’s Izakaya experience left me astounded.

A Mesmerizing Setting

As guests arrive at POSI+IVO, they are greeted by the lush palms and local fauna, walking along a boardwalk towards the ocean. The views from the pool verandah are simply mesmerizing, with crashing waves in the distance. A unique feature of the restaurant is the area with sand flooring, allowing you to indulge in a delightful cocktail and a delicious meal while burying your toes in the soft sand.

An Exclusive Izakaya Experience

The Izakaya experience at POSI+IVO is limited to just six guests. On the night my companion and I decided to indulge, we were fortunate to be the only ones, making it an incredibly exclusive offering. Tucked away from the main bar, the Omakase Bar welcomes diners with its stone countertop and gently swaying fans, creating an atmosphere that transports you to a different place altogether. We were warmly greeted by Chef Franco, who immediately delved into the Izakaya dinner.

Exquisite Culinary Creations

The multiple courses showcased the mastery of Chef Franco, using seasonal, fresh ingredients and fish to create 15 different delectable offerings. Our culinary journey ranged from lobster gyozas to spicy bluefin tuna tartare, from hand-broiled Hokkaido scallops with kewpie mayo and parmesan cheese to mouth-watering Buta Tsukune – a kuro buta ground pork skewer with shiso, garlic, onion, and a cured egg yolk.

Chef Franco’s Passion Shines

Throughout the Izakaya experience, Chef Franco’s passion and skill were evident. His piercing blue eyes sparkled with enthusiasm as he effortlessly prepared each course, never missing a beat in our conversation. Every dish was a work of culinary art, beautifully presented on distinctive stoneware, ceramic dishes, and poised seashells.
